Baked Tilapia

Ingredients:

  • 2 lbs Tilapia, Salmon, or other fish
  • 1/3 cup Big Daddy’s Marinade

Directions:

  1. Marinate Tilapia (fish) for 15 minutes.
  2. Place on a baking sheet.
  3. Bake at 325º for 20 minutes.


Superb Herb Fish

Ingredients:

  • Mahi Mahi steak (or fish of choice)
  • Superb-Herb seasoning
  • Lemon

Directions:

  1. Heat olive oil with butter (optional).
  2. Place fish in pan, sprinkle with Superb-Herb seasoning, and cover with lemon juice.
  3. Cook until brown, then flip and repeat with other side.

Seared Scallops in Ceasar Salad

Ingredients:

  • scallops
  • extra virgin olive oil
  • Big Daddy’s Superb-Herb seasoning

Directions:

  1. Sprinkle Big Daddy’s Superb-Herb Seasoning on each side of scallops and let sit while oil is heating
  2. Place extra virgin olive oil in pan on medium heat
  3. Place scallops in pan and cook 5-7 minutes on each side (until seared golden brown on each side)

Ceasar Salad

Ingredients:

  • 3 romaine hearts
  • 2 garlic cloves
  • 2 anchovies
  • 1 lemon
  • 1 coddled egg (boil water and remove from heat, place eye in water for 2 minutes)
  • 1 teaspoon Big Daddy’s Superb-Herb seasoning
  • 3 tablespoons Worcheshire sauce
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup parmesan cheese

Directions:

  1. in large wood salad bowl mince garlic cloves
  2. mince anchovies
  3. add coddled egg
  4. squeeze juice from 1 lemon
  5. add Worcheshire sauce and olive oil
  6. add Big Daddy’s Superb-Herb seasoning
  7. add parmesan cheese
  8. cut romaine hearts into small pieces and toss into bowl
  9. toss contents until mixed thoroughly

Home Made Croutons

Ingredients:

  • any type of bread loaf (french, italian etc.)
  • 1/2 cup extra virgin olive oil
  • Big Daddy’s Superb-Herb seasoning

Directions:

  1. cut bread loaf into 1/2 inch cubes
  2. place bread cubes in large zip lock bag or large browning bag
  3. pour in olive oil
  4. generously shake Big daddy’s Superb-Herb seasoning
  5. close bag and shake well
  6. place on cookie sheet and bake in oven at 300 º until toasted
  7. let cool and toss in salad as desired

Carolina Crab Cakes with Remoulade sauce

Ingredients:

  • 2 large eggs
  • 1/2 cup chopped sweet onion
  • 1 cup chopped red (or yellow or orange) bell peppers
  • 3 tablespoons white wine
  • 1 tablespoon lemon juice
  • 1 teaspoon spicy mustard
  • 1 pound lump crab meat
  • 4 tablespoons butter
  • 1 cup italian bread crumbs
  • 1 teaspoon Big daddy’s Superb-Herb seasoning

Directions:

  1. mix above ingredients in large missing bowl
  2. form into patties and coat with extra bread crumbs as needed
  3. coat skillet with olive oil and heat to medium high
  4. cook crab cakes over medium high heat, turning once, until golden brown (approx. 5 minutes per side)
  5. serve with remoulade sauce

Remoulade Sauce

Ingredients:

  • 1/2 cup chopped red bell peppers
  • 1/4 cup chopped scallions
  • 1/4 cup dijon mustard
  • 1/4 cup mayonaise
  • 2 tablespoons chopped parsely
  • 2 tablespoons honey
  • 1 tablespoon Big daddy’s Superb-Herb seasoning

Directions:

  1. blend all ingredients in a food processor until vegetables are finely chopped
  2. chill until ready to serve

Note: crab cakes shown with roasted corn relish and roasted brussel sprouts
